The Path
Training at Auburn University and New England Culinary Institute gave Rob McDaniel an early grounding in both hospitality study and kitchen practice. From there, the work moved through kitchens where technique and temperament were tested side by side. Under Johnny Earles, Chris Hastings, and Drew Robinson at Criolla’s; Hot & Hot Fish Club; Jim ’N Nick’s BBQ in Grayton Beach, FL; Birmingham, AL, he accumulated the kind of repetition and range that later read as control rather than effort. The influence is visible in the way the career builds: one step, then another, until the shape becomes recognizable. SpringHouse in Alexander City, AL, became the longest and most defining stretch of that work. As Executive Chef from 2009 to 2020, McDaniel held the line there long enough for the kitchen to develop a deeper profile—Southern in grounding, exacting in execution, and consistent over time. That decade-plus run is where the career shifts from apprenticeship to authorship, with the restaurant serving as the proving ground for a more settled point of view. The present tense of that experience now runs through two Birmingham addresses. Since 2020, McDaniel has been owner and Executive Chef at Helen, and since 2025 he has also been co-owner and Executive Chef at Bayonet. The throughline is continuity: the same discipline, carried into different formats, with each restaurant extending the same working vocabulary rather than replacing it.
The Work Today
At Helen, where McDaniel has been owner and Executive Chef since 2020, the current work is anchored in the Southern cooking that threads through the rest of his career. In Birmingham, the restaurant is the clearest expression of that accumulated experience: formal study, mentorship, long service, and a steady command of the stove brought into one room. Bayonet, also in Birmingham, expanded that practice in 2025, when McDaniel became co-owner and Executive Chef. The restaurant carries two named dishes attached to his work, the tuna burger and Swordfish Reuben, and McDaniel’s own framing is direct: “It’s all going to be seafood.”
