The Path
A kitchen apprenticeship in repetition and timing started at Crook’s Corner in Chapel Hill, North Carolina, where Robert Stehling began as a cook. The line of work continued through Home, Sarabeth’s Kitchen, and Arizona 206, with each stop adding another layer of practice in the ordinary mechanics that define a working cook: heat, pacing, seasoning, and service. The next step was ownership, and with it the longer responsibility of shaping a place into a durable point of view. In 1996, Robert became chef/owner at Hominy Grill in Charleston, South Carolina, and he stayed until 2019. Across those years, the restaurant became the place most closely linked to his name, a room where the same standards had to hold day after day through more than two decades of service. Private chef and consultant is a different format, but it is still chef’s work. For Robert, the move from a public dining room to more intimate service has changed the setting, not the underlying discipline: practical knowledge gathered over time and still put to use.
The Work Today
"In some ways, my goals and what I started out to build are history now."
