A dining room’s energy has been part of Ron Blaauw’s brief as much as the food on the plate. The measure he named — that a room can be full and still not buzz — points to a way of thinking about hospitality that treats atmosphere as an operational fact, not a decorative extra. The discipline of service was first built at De Kersentuin in Amsterdam, where Ron Blaauw began as a cook and learned the rhythm of professional kitchens. From there, the same trade moved through Aujourd'hui and 't Jagershuis, with each kitchen adding experience and sharpening the fundamentals of line work, timing, and the unseen labor that keeps service moving. Leadership in his own name came with Ron Blaauw in Ouderkerk aan de Amstel (1999–2011), where the role of head chef / owner tied kitchen work to the shape of the room itself. That connection between cooking and room energy continued at Ron Blaauw in Amsterdam (2011–2013), carrying the same approach into a new setting without changing the underlying emphasis: a restaurant should feel active before the plates are cleared.
