Pastry work at Gotham Bar and Grill in Manhattan, New York City gave Ron Paprocki a starting point in 2012 that rewarded precision, nerve, and consistency. In one of the city’s most closely watched kitchens, the pastry station became the place where he built speed, control, and confidence under pressure. That discipline carried into 2021, when Paprocki moved into the Executive Chef role at Gotham Restaurant.

The Work Today
