Old barrels remain part of the framework, and the aim is maturity rather than shortcut. The target is clear in the wines themselves: texture, length in the mouth, power, and the capacity to age. The point is not early display. It is structure that can hold and develop. The vineyard work is just as deliberate. Grapes are brought to good maturity, sorting happens in the vines, and the rows are revisited before the fruit is judged ready. That process treats the vineyard as a sequence of choices, not a single decisive moment. Each pass refines the one before it. Gevrey-Chambertin and Morey Saint-Denis are central to that approach. The parcels there are tied to the house’s identity as vignerons, where site, fruit, and finish matter more than any abstract label. The wines carry the shape of the land because the land is given time to speak. Old plantings are part of the same logic of preservation. As Ponsot put it, "This is why, to this day, we have maintained 80 per cent of our old, precious 1911 aligoté plants." The point is continuity through care, not display: material worth keeping is maintained by repeated attention.
