i. Biography
Raised in Mexico City and Puebla, Ruben Ortega learned early that pastry starts at home, with hands on dough and repetition at the bench. An aunt taught him to knead in a hollow tree trunk, a formative lesson that ties technique to memory without separating the two. While he was in college in Mexico City, he was already thinking in practical terms: come to the United States, work, and return with enough to pay for school. That plan set the course, but the materials of his early life — family, flour, Mexico, and work — stayed embedded in the way he cooks.
The Climb
Houston Community College Culinary Arts Program gave Ruben Ortega the framework that formal training can supply: discipline, precision, and a way to organize instinct into repeatable work. That foundation carried into The Village in Cupertino, California, where he worked as a bar-back, then prep cook, then line cook. In those roles, the kitchen itself became the teacher; service, repetition, and pace shaped his sense of timing, organization, and endurance. Pastry became the place where those habits resolved into a clearer practice. As Executive Pastry Chef of H Town Restaurant Group, Ruben Ortega sits within a larger pastry program while maintaining a distinct point of view. He is also the opening Pastry Chef of Hugo’s, Caracol, Xochi, URBE, and Zaranda, a role that means establishing the dessert program at each restaurant from the start. As pastry program developer of Backstreet Cafe and Prego, he extends that work beyond individual plates and into the structure of the program itself.
Today
As Executive Pastry Chef at H Town Restaurant Group, Ruben Ortega focuses on Mexican-inspired desserts and ingredients. The work reads as an ongoing exchange between memory and present-day restaurant service, with Mexico as a source of reference and the contemporary group setting the scale. In his opening roles at Hugo’s, Caracol, Xochi, URBE, and Zaranda, that approach carries across kitchens while still adapting to the needs of each house.
