Russell Norman’s route passed through Heathland School and the University of Sunderland, then through an arts administrator role at Easington District Council, where organization and public-facing administration formed part of the trade foundation. Bar work gives a room-level education in timing, reading guests, and controlling pace. At Joe Allen, Russell Norman worked as a barman before moving into general manager roles at Circus in Soho and Zuma in Knightsbridge, positions that required floor discipline, staff coordination, and the daily mechanics of service. Restaurant groups sharpen systems as much as taste. As operations director at Caprice Holdings, Russell Norman worked at scale before co-founding Polpo in Soho, London, in 2009, a business that ran until 2020. The same operator’s interest in compact, clearly framed concepts also included co-founding Spuntino in London and founding Brutto in 2021.
