Ryuki Kawasaki is the Japanese-born Chef de Cuisine at Mezzaluna, a two Michelin-starred restaurant on the 65th floor of lebua at State Tower in Bangkok, where he has led the kitchen since 2015. He elevated Mezzaluna to two Michelin stars in 2017 after replacing the Sühring brothers, blending modern French cuisine with Japanese precision and seasonal ingredients. Kawasaki trained in French and European cuisine in Japan, apprenticed under Paul Bocuse in Lyon, and gained experience at top kitchens including Le Château Taillevent-Robuchon in Tokyo, Nirvana and O Rebelle in Paris, Sketch in London, and Twist by Pierre Gagnaire in Las Vegas.
