The Path
Hands-on kitchen leadership defines Salvatore Olivella’s work in early roles and in the present. As owner/chef at Olivella in North Bergen, New Jersey, USA (from 2017), he was already working from the pass outward, with the daily discipline of service shaping the standard. That same directness carries through his later posts, where the craft is built through proximity to the line rather than distance from it. Today, Salvatore is chef of Little Charli East (since 2025) and Executive Chef of The Little Pickle, keeping the focus on execution and continuity. The through line is clear: responsibility has expanded, but the method has not softened. The work stays centered on presence, repetition, and a fixed culinary point of view.
The Work Today
Mediterranean Italian cooking is the frame, with authentic Italian pizza held firmly inside it. Salvatore Olivella’s kitchen work is set around food first, and food done properly, with standards enforced through daily tasting, adjustment, and return to the plate. The practice is explicit in his own words: “I worked so hard for this, everything for me is the customer, the food always right. I look at my meatball, I taste everything every day. I'm here seven days a week.” That routine is the craft. It puts consistency ahead of display and keeps the kitchen accountable to the same checks every day. The result is a style that is generous in scope but exacting in method, with the food kept at the center of every decision.
Signature
Salvatore's signature dishes include Margherita, Don Maradona Snow White, Frank Sinatra, Sushi di Parma, and Farfalle di Olivella. The set reads as a useful cross-section of the kitchen: classic forms sit alongside names with more personality, but each dish remains tied to the same instinct for Italian reference, directness, and a menu that speaks plainly while still leaving room for character.
In Their Words “I worked so hard for this, everything for me is the customer, the food always right. I look at my meatball, I taste everything every day. I'm here seven days a week.”
Acclaim
Sushi di Parma is built as housemade fior di latte cheese wrapped in prosciutto di San Daniele. In one dish, Salvatore Olivella’s approach is easy to read: Italian ingredients, tight construction, and attention to contrast and texture, with the final bite doing the work rather than the description.
