    The Path

Trade training at TAFE Illawarra gave Sam Smith the base layer: systems, timing, and the habits that hold service together. That grounding started at Bomaderry Bowling Club in Bomaderry, where he worked as an apprentice and learned the repetition that turns prep into practice. He then continued as an apprentice at Pilu in Freshwater, adding more polish to the same fundamentals without losing the discipline that apprenticeship demands.

International kitchens widened the remit of that training. As chef at The Ledbury in London and as chef at L'Ancienne Auberge in France, Sam Smith worked in settings that required adaptability as well as consistency. Returning to Australia, he took on chef roles at SAGE and AKIBA Restaurants in Canberra (from 2014), Rick Stein's at Bannisters and Cupitt's Estate (from 2014), and Qualia Resort in Hamilton Island (from 2014).

The list reads as a build in scale and responsibility, moving from learning roles into kitchens where timing, pace, and standards had to hold across different formats. Further work at a private estate in Riyadh, Saudi Arabia, and later as executive chef and partner at Tusk in Portland, OR (from 2018), extended that progression into leadership. The through-line is clear: apprenticeship first, then broader kitchen experience, then responsibility for shape and output at higher levels.

    The Work Today

The present work carries the mark of that range. Sam Smith’s practice has been formed by service kitchens, international placements, and roles with greater authority, so the result is a style built on control rather than flourish. The value here is in the accumulation: technical discipline from training, adaptability from travel, and the ability to apply both without losing pace.
