The Climb
Training in design can carry into kitchen work through sequence, touch, and repeatable hand skills. Sarah Minnick trained at Rhode Island School of Design, where she also worked as a work-study cafe worker at on-campus student cafe in Rhode Island School of Design, before moving into patternmaking at Adidas and then becoming an operator at Lovely Hula Hands in Portland, Oregon (from 2003). Restaurant operation and making sit close together in this line of work. Today, Sarah is chef and operator of Lovely's Fifty Fifty, where the design background reads less as decoration than as discipline: sourcing, dough, toppings, and service arranged through hands-on practice. “At a young age, I realized I really liked working in restaurants, and so that part was not so surprising. But I didn’t see myself being over in the kitchen like I do now. Finding the love for that was a big surprise.” Sarah has said.
Today
Market-led pizza depends on what is actually arriving, not on a fixed board. The kitchen’s sourcing is closely tied to Portland State University Farmers Market produce, with seasonal availability shaping the menu week to week and Oregon-grown fruits and vegetables folded into artisan pizzas as they arrive. Seasonal topping work at Lovely's Fifty Fifty uses local, seasonal, and often unexpected ingredients, including edible flowers, fermented vegetables, and small-batch cheeses. Sarah makes pizzas with seasonal produce and foraged ingredients, a practice that continues in the restaurant’s emphasis on West Coast seasonal produce and whole-grain sourdough bread-making techniques. Dough is treated as part of the craft, not just a carrier. The pies are sourdough, made with flours from Oregon-grown grains, then topped according to the market and the season.

Sarah Minnick has received James Beard Foundation Awards — Outstanding Chef nominee (2024). Peer recognition has placed Sarah Minnick in the Best Chef: Northwest & Pacific semifinalist field (2020).
