“I was working at Republic when I first met Ping, who was a regular there. About a year before Marrow opened, she offered me a position on her team.”
The Climb
Michigan State University and the International Culinary Center gave Sarah Welch the formal base for a career that moved through some of Detroit’s most closely watched kitchens. The work at Republic in Detroit, Michigan, Parks and Rec in Detroit, Michigan, and Revolver in Hamtramck, Michigan (2017) marked successive posts in that progression, with each role expanding her presence in the city’s dining scene. At Marrow in Detroit, Michigan (2018–2025), Welch held the role of Executive Chef and partner, a position that carried both kitchen leadership and a hand in shaping the restaurant’s identity. Sarah later became co-founder and co-owner of Mink.
Today
Welch appears as an innovative chef at Traverse City Food & Wine in Traverse City. Her approach to leadership is equally specific: “My goal was to build a kitchen environment that line cooks would love, focusing on good work-life balance, fair pay, autonomy, and self-management.” She has also said, “We prioritize a culture where happy, well-supported staff are essential.”
