Cocktail service under Sasha Petraske was built on discipline, restraint, and a working command of the classic repertoire, including fizzes and flips. The standard it set was practical: cleaner execution, tighter rooms, and bartending treated as a repeatable craft rather than performance. “There are so many people who do stuff that’s just a joke, and it’s unfortunate that a lot of them trace that lineage to my bars.” Sasha has said.
Career Arc
Hospitality training begins with Stuyvesant High School, listed as Sasha Petraske's education, before the work moved into bar ownership and room-building. In 1999, the founding of Milk & Honey in New York, NY placed a small-format cocktail bar into the center of the modern cocktail revival. By 2002, the bar-owner role at Milk & Honey formalized that work, with the house style grounded in classic drinks, controlled service, and a stricter operating culture than much of the period.
