Edomae sushi and kaiseki both train restraint through sequence, temperature, cut, and service rhythm. Before Satoshi Tada became executive chef at Sushi Shikon in Hong Kong, that education was built at the counter: hand position, rice condition, product choice, and the pace at which each serving is placed before the guest. In these formats, control is the craft; absence of excess is not simplicity but calibration. Counter work in the Yoshitake line sharpened that calibration. Under Masahiro Yoshitake at Sushi Yoshitake in Tokyo, Satoshi Tada developed a working standard around precision, product selection, and counter-side hospitality.
