i. Biography
Before a classroom ever entered the picture, the work had already been learned shift by shift: cellar counts, floor rhythm, bottle service, and the discipline of reading a room. In Austin and San Antonio, Scott Ota built that foundation through beverage roles that demanded recall, timing, and service judgment. At The Driskill Hotel in Austin, where he served as sommelier and wine captain, the job was not just to pour but to keep pace with the cadence of polished service and the coordination behind it. The next step brought him into leadership, where the questions widened from what a guest tasted to how teams trained, how systems held, and how service stayed smooth under pressure. He has even said, “It was clear this wasn’t going to be a professional career.”
The Climb
Scott Ota trained at Texas State University before a career shaped by Austin and San Antonio hospitality. The early work was practical and close to the floor, the kind that builds judgment through repetition. At The Driskill Hotel in Austin, Texas, he served as sommelier and wine captain, a role that asked for attentiveness, memory, and confident guest guidance. He then moved into management and beverage leadership at ELM Restaurant Group’s Arro and Italic in Austin, Texas, where the job expanded from service execution to the structure supporting it. In 2016, he became general manager and beverage director at High Street Wine Co. Later, he served as general manager at Supper at Hotel Emma in San Antonio, Texas, and as manager and beverage lead at Botika in San Antonio, Texas. Across those posts, the throughline was consistency: keeping standards in place, managing the moving parts, and building trust through repeatable service. Today, Scott is manager and beverage lead of Pharm Table and Lecturing Instructor—Hospitality and Service Management of CIA San Antonio. The pairing makes sense for someone whose work has long connected floor service with the mechanics behind it. His career has been built less on display than on accumulation: skill, judgment, and the kind of reliability that lets teams function.
Today
He now balances two current posts: manager and beverage lead at Pharm Table in San Antonio and Lecturing Instructor of hospitality and Service Management at CIA San Antonio. The split reflects a working knowledge of beverage leadership and wine education, grounded in the practical side of restaurant operations. His focus stays on systems, training programs, streamlined operations, cost control, and talent development—work that keeps service moving while giving staff room to work well. That balance between floor presence and operational discipline has defined the shape of his career.
