The Work Today
At Los Félix in Miami, the central discipline is repetition: grinding corn daily, centering heirloom corn, and treating Mesoamerican cuisine as a living craft rather than a fixed category. Sebastian Vargas uses those methods to give the restaurant a clear point of view, with masa, grain, and source carrying the weight of the plate instead of ornament.
