Sébastien Canonne

Sébastien Canonne is a French pastry chef and the co-founder of the French Pastry School in Chicago, which he launched in 1995 with Jacquy Pfeiffer. He moved to the United States in 1991 and later became executive pastry chef at the Ritz-Carlton Hotel in Chicago before founding The French Pastry School, The Butter Book, and EQUII. He is a Meilleur Ouvrier de France (MOF), and sources also note honors from the French government including the National Order of the Legion of Honour and Academic Palms.
