Sébastien Rath is the chef behind Le Saint Hilaire in Saint-Hilaire-de-Brethmas, near Alès in France’s Gard department, where he and his wife Gwladys welcome guests at the restaurant. He had previously worked in Alès and, before moving the restaurant to Saint-Hilaire-de-Brethmas in 2023, had already earned a Michelin Green Star in 2021; the restaurant received its first Michelin star in March 2024.
