The Path
Since 1984, sushi work has sat at the base of Seiichi Kashiwabara’s practice: the line is tight, the standards are strict, and the discipline of the format leaves little room for shortcuts. Starting as a chef at a sushi restaurant in Ottawa, Canada, he learned in a setting where precision and restraint were part of the job, and that early training in detail-forward service later shaped the way he would run his own kitchens.
