    i. Biography

    Sergio Díaz is the chef and founder of Sublime in Guatemala City, which he created in 2019 with anthropologist Jocelyn Degollado to reinterpret Guatemalan history and ingredients through contemporary cuisine. He is a Quetzaltenango-born Guatemalan chef with more than 18 years of experience, and Sublime has appeared on Latin America’s 50 Best Restaurants and been recognized as one of Guatemala’s leading restaurants.
