At Ecole Ferrandi, Simon Horwitz picked up the kitchen language that matters most in trade: precision, repetition, and standards that do not bend. That training set the frame for a career that moved through high-pressure rooms one after another, with each post adding range without changing the core expectation of the work. He went on to work as chef at Bastide Saint-Antoine, chef at Oustau de Baumanière, chef at Strato in Courchevel, and chef at Balzac in Paris. The opening work sits in the same line. Simon Horwitz assisted Bertrand Grébaut for the opening at Septime (from 2011) and participated in the opening at Crom'exquis, where the job was not only to cook but to help a room take shape. Those are the kinds of assignments that test timing, coordination, and the ability to keep standards intact while a service is still finding its footing. Today, Simon is chef of Elmer.
