Simone Padoan is the founder and titular pizzaiolo of I Tigli in San Bonifacio, Verona, where he has been associated with the restaurant since 1994. Official and profile sources describe him as the creator of a contemporary, gourmet-style pizza concept that blends pizza with haute-cuisine techniques, and the restaurant remains identified with his name and leadership. He is widely credited with helping redefine Italian pizza service through tasting-style, shareable pizzas served at the table.
