The Climb
Pastry discipline is built on repetition, timing, and control, and Stanton Ho’s training at University of Hawaii – Kapi'olani Community College gave him that foundation before he moved into large-format hotel and corporate dessert work. The throughline is consistency under pressure: pastry that has to hold its shape, its timing, and its standard across service. Long tenure in a hotel pastry program says as much about reliability as it does about range. As Executive Pastry Chef at Las Vegas Hilton in Las Vegas, Nevada (1979–2007), Ho worked in a setting where dessert service was part of the broader event structure. The span of those years points to a chef trusted with polish, sequencing, and the daily demands of a large operation. Competitive pastry leadership requires another kind of discipline, one that extends beyond a single kitchen. When Ho became president/chairman of United States World Cup Pastry Team at United States World Cup Pastry Team (1999–2001), his work moved into representation and standards at an international level. The role placed pastry in the language of rigor, judged execution, and national presence. Corporate confection work asks for production sense as much as creative judgment. As Corporate Executive Chef at Chocolates a la Carte in California (2007–2012), Ho brought pastry and chocolate leadership into a framework that required oversight as well as output. The title reflects responsibility for shaping, directing, and refining work across a broader system. Consulting turns accumulated technique into a service for others. As confection, chocolate and Pastry Chef Consultant, and Master Chocolatier for the United States at Luker’s Chocolate Company, Ho’s expertise was applied across confection, chocolate, and pastry with a specialized focus on fine chocolate. The role names the scope clearly: technical, specific, and rooted in the language of the trade.
Today
His career reads as a progression through the working structures that shape pastry at scale: education, hotel service, competition, corporate production, and consulting. Stanton Ho’s place in the field is defined by sustained control of pastry craft across those settings, with each step adding another layer of responsibility rather than a change in direction.
