Coming Up
Training at Herbert Beltlein's Altes Zollhaus gave Stephan Garkisch the base that many kitchens demand but few actually produce: discipline, precision, and a working sense of how careful habits become repeatable craft. Those are not decorative virtues in a professional kitchen; they are the difference between intent and execution. The move to chef at Strahlenberger Hof in Schriesheim (2000–2002) added another layer, with service responsibility sharpening the relationship between training, judgment, and pace. Since 2003, Stephan Garkisch has held the role of Inhaber & Head Chef of Bieberbau, where ownership and kitchen leadership sit in the same daily practice. That kind of position asks for consistency before flourish, and for decisions that hold under service. His path has been built in sequence: apprenticeship, chef role, then stewardship, each step reinforcing the one before it.
Where They Are Now
The title is plain in English: owner and Head Chef. At Bieberbau, that means the restaurant's identity is tied directly to the rhythm of the kitchen and the standards of service. The room and the cooking are not separate exercises; they operate as one working unit, and Stephan Garkisch is the person responsible for keeping that unit aligned. The cuisine is modern, specifically Modern French-inspired German cuisine, and the language used to describe it points to control rather than flourish. Dishes are decently seasoned, with strong aromas and temperatures and textures handled well. That is a technical description, and it matters: it says the cooking is built on exactness, with heat applied in measured ways and texture given room to register clearly. The flavor construction also leans on relation rather than accumulation. One element meets another in a way that keeps the plate recognizable while giving it a slight edge of surprise. Herbs and spices are treated as working ingredients, not decoration; they shape the palate and the experience of the dish. In that framework, restraint is not lack. It is the method. Taken together, the cooking reads as balanced and deliberate. Bieberbau is a house shaped by a chef who understands that refinement often comes from knowing what to leave in place, not from adding noise.
In Their Words “We are working together to develop the idea of “Herbs and Spices”.” “The profession became a vocation in the years 2000 to 2002 in the “Strahlenberger Hof” in Schriesheim, under the auspices of my mentor Jürgen Schneider.”
Honors
The public record here is lighter on trophies than on working milestones. What is notable are the completed chef training from 1997 to 1999, the chef role at Strahlenberger Hof from 2000 to 2002, and the 2003 takeover that established long-term stewardship in Berlin-Wilmersdorf. That absence of a crowded awards list keeps the emphasis on the work itself. The visible markers are the places, dates, roles, and the cooking style: Modern French-inspired German cuisine, strong aromas, well-handled temperatures and textures, and flavor combinations that favor intelligence over display.
