The Path
The pastry line at The French Laundry in Yountville, CA (1994–2000) set the terms for Stephen Durfee’s reputation: meticulous work, clean structure, and desserts built with precision rather than excess. As Executive Pastry Chef, he worked in a kitchen where rigor and clarity were part of the brief, and his name became attached to a style that held flavor, texture, and balance in equal measure. Those years established the standard that followed him. In 2000, the pastry & baking faculty at Culinary Institute of America, Napa Valley campus gave Stephen Durfee a different kind of platform for the same discipline. The classroom demanded that technique be made legible, repeatable, and durable, and his work there translated professional standards into instruction for students entering the field. The shift from service to teaching changed the setting, not the expectations. At Dandelion Chocolate in San Francisco, Stephen Durfee now directs the Chocolate Curriculum, carrying that same exactness into a role centered on education and structure. The title connects his earlier kitchen work with his present focus on chocolate and sugar, with curriculum design as the current form of the craft. The throughline is plain: disciplined technique, taught and applied.
The Work Today
Chocolate and sugar are the center of the work now. That focus reduces the field to its essentials: material, technique, and control. For Stephen Durfee, the emphasis is on handling those ingredients with the same attention that marked his pastry work—measured, deliberate, and exact. The result is a practice shaped by refinement rather than range.
In Their Words “The quality and depth of instruction was superb. I have always credited the faculty for providing the basic skills necessary to enter the job market and I felt confident that I could compete with anyone.”
