i. Biography
Stephen Morrissey is Vice President of Creative at the Specialty Coffee Association, a role held since 2025. The work sits in a part of specialty coffee where service, public language, events, and institutional identity meet. His record runs through Square Mile Coffee Roasters in London, Intelligentsia, SCAA, Coffee Common, and a Chicago festival built around coffee beer collaborations, with hospitality practice giving the creative work its base. Specialty coffee has had to build a working vocabulary for taste, sourcing, brewing, service, and public presentation. Morrissey’s career belongs to that build-out: moving between cafes, kitchens, roasting conversations, collaborative formats, and association work without separating the cup from the conditions in which it is served, discussed, and understood.
The Climb
Training at Technological University Dublin and Skerries Community College preceded the service work that forms a practical foundation in hospitality. Stephen Morrissey’s early roles included kitchen porter, assistant chef, assistant head chef, head waiter at Italian restaurant in small town north of Dublin, and cafe worker at cafe. Those jobs teach timing, station awareness, repetition, and guest response before they teach language. Hospitality craft depends on small corrections made under pressure: pace in a kitchen, sequence on a floor, attention at the point of service. The early work in Morrissey’s record placed him inside those systems, where quality is not abstract and a guest’s first sip or first bite gives immediate feedback. The London phase brought coffee into sharper professional focus through a professional coffee connection at Square Mile Coffee Roasters in London (from 2008). In that setting, coffee was handled as a craft subject with its own standards of sourcing, roasting, brewing, service, and description. Morrissey’s role developed during a period when specialty coffee was becoming more explicit about how it spoke to both trade peers and the public. Creative work in coffee has to translate without sanding off difference. As Senior Creative Advisor, part-time, at SCAA, Morrissey worked in the zone between craft practice and industry communication: how to present the hands, histories, techniques, disagreements, and pleasures around coffee without reducing them to slogans. Today, Stephen Morrissey is Vice President of Creative of Specialty Coffee Association.
Today
Since 2025, the Vice President of Creative role at the Specialty Coffee Association has gathered several strands of specialty coffee work: operations, communications, collaborative events, and industry-facing identity. Morrissey’s background puts tactile service and conceptual framing in the same frame, from bar and table to brewer, stage, and global association work. Coffee beer collaborations are part of that specialty, including Uppers & Downers, the all-coffee-beer festival created in partnership with Michael Kiser. The format brought together two professional cultures with distinct service rituals, production languages, temperatures, and audiences. In Chicago, the festival featured single-origin coffees, cold brew, coffee cocktails, and 20 experimental coffee beers made specifically for the event. Collaboration of that kind depends on context as much as novelty. In Morrissey’s work, coffee can function as a brewed beverage, a cocktail element, a collaborative ingredient, or a subject for trade debate. The point is not to make coffee less specific, but to test how its aromatics, service expectations, and social uses change when placed alongside another craft. Across Square Mile Coffee Roasters in London, Intelligentsia, SCAA, Coffee Common, Uppers & Downers, and now the Specialty Coffee Association, the through-line is the expanding trade language of specialty coffee: from the cup served to one guest to the shared vocabulary used by professionals across the industry.
In Their Words “My favourite ones are those I can drink in three sips, at a temperature that almost feels the same as my own. A perfect cappuccino is my favourite breakfast.” “I oppose anything that would seek to homogenize our industry and do not accept that this proposed Unification would do that.”
