Takayoshi Yamaguchi is the chef and owner of Sushidokoro Mekumi in Nonoichi, Ishikawa, on the outskirts of Kanazawa, where he opened the restaurant in 2002. Coverage describes him as an obsessive sushi chef known for sourcing fish with a rigorous, research-driven approach to flavor and umami. Mekumi earned Two Michelin Stars in the regional Michelin Guide editions for 2016 and 2021.
