In Tokyo noodle cooking, stock is not a backdrop; it is the material that decides the bowl. In Takuro Yanase’s work, Amakusa Daio chicken, shijimi clams, dried fish, soy sauce, smoked chashu and wheat noodles are handled as interlocking parts: depth, mineral savor, aroma, salt, smoke and bite. Since 2024, the Ramen Jazzy Beats offshoot in Tokyo has extended that practice into another room, with the craft still organized around stock, tare, noodle structure and the short window between finishing a bowl and serving it.
The Climb
Kitchen rhythm can come from repetition as much as recipe. Before cooking, Takuro Yanase worked as a Professional DJ; the useful part of that background is not mythology but timing, variation and control. His later training and work as a culinary trainee and cook in French and Italian restaurants in Fukuoka, Japan gave him exposure to sauce work, heat management, structure and layered flavor before he continued as a cook in French and Japanese kitchens in Toronto, Canada. Japanese noodle culture became the format for that accumulated technique. As owner-chef of Ramen Break Beats (since 2022), owner / operator of Ramen Afro Beats, and owner / operator of Jazzy Beats (since 2024), Yanase works in a register where broth, tare and noodle texture carry the bowl equally. The through-line is disciplined stock work, assertive seasoning and noodles treated as load-bearing, not decorative.
The Work Today
At Ramen Break Beats in Tokyo, each serving is assembled as a sequence of broth, tare, noodles and garnish. Yanase remains owner-chef, and the shio and shoyu versions both use al-dente noodles calibrated to meet the soup without going slack. Te-momi hand-massaged noodles are available by request, changing the surface and chew so each strand holds broth differently and gives the bowl more tactile variation. Soy-sauce tare gives the shoyu bowl its frame. The restaurant uses five varieties of soy sauce, and the tare is praised for its tang: savory, aromatic and sharply defined. Toppings are used to adjust texture as much as flavor, including marinated eggs, fried enoki mushrooms in place of menma bamboo shoots, and wontons. The result is structured around contrast: soft, crisp, chewy, smoky and liquid elements arriving in order. Special Shio Ramen uses Amakusa Daio chicken broth and shijimi clams, then adds four kinds of smoked chashu, house-fried enoki mushrooms and wontons. The craft problem is balance: salt clarity against poultry depth, clam savor against smoke, clear soup against richer toppings. The Duck and Foie Gras Limited Edition preparation uses a consomé made with Amakusa Daio chicken and soy sauce, finished with duck, pork and chicken chashu, foie gras, wontons and fried enoki mushrooms. Even with a richer vocabulary, the dish stays organized around broth first and controlled seasoning. Broth continuity is part of the method. Yanase uses the yobi-modoshi boiling method, keeping one pot perpetually boiling while new broth is added as it depletes, deepening flavor over time. He is also known for refined use of rare chicken breeds, artisanal soy sauce and his signature “Mensen” noodle-folding technique. At Ramen Jazzy Beats in Tokyo, opened under Yanase’s operation since 2024, the Tori Nibo Ramen uses a milky, fragrant paitan soup made with Amakusa Daio chicken from Kumamoto and several kinds of dried fish. Straight noodles from Mikawaya Seimen are paired to that soup, keeping the bowl focused on aroma, salinity and the fit between noodle and broth.
