Before the kitchen, Tan Choon Hoe built a working life in jobs that demanded timing, composure and attention to people: bill collector, van driver, limousine driver in Johor Bahru, and tutor of English language in Penang. Trained at La Salle Secondary School, he came to cookery through experience outside the trade rather than through the usual apprenticeship route. Those earlier roles map cleanly onto kitchen work. Collection work requires tact under pressure. Driving across Johor Bahru teaches pace, route sense and the discipline of getting there on time. Teaching English language in Penang calls for clarity and steadiness. Taken together, they describe the kind of practical judgment a cook uses every service: reading the room, managing movement and staying useful when conditions change.
