    i. Biography

Her premise is plain: “Perlée was never just about making wine.” For Tiffany Austin, the work extends beyond the bottle into hospitality, atmosphere, and a sense of place that stays with a guest after the pour.

    The Climb

At Perlée, Tiffany Austin holds the title of proprietress and co-founder, a role she has held since 2026. The position reads as stewardship as much as leadership: Perlée is framed not as a standalone label, but as a working expression of a wider idea shaped by its surroundings. The emphasis is on building, not announcing, assembling a venture with enough texture and meaning that, in Austin’s telling, it feels earned rather than imposed.

    Today

Traditional-method sparkling wine is the technical core of the house, a method that depends on patience, precision, and attention to nuance. For Austin, that technique is tied to place. The wine is treated as part of a larger structure in which Oregon’s landscape and ingredients are not backdrop but material. “We wanted to create a place that, really, could only exist here; where Oregon's landscape, its remarkable ingredients, and genuine hospitality come together to create something special and memorable,” she says. That idea gives Perlée its register. The wine is not presented as a separate luxury object, but as one element in a broader hospitality language. Ingredient, setting, and welcome are meant to read as one system. Austin’s approach keeps refinement from becoming remote; it stays grounded, warm, and specific to place. “We hope every guest leaves feeling more connected to our place than when they arrived.” The measure is connection, not display. The aim is to leave a guest with a clearer sense of Oregon through what they taste, how they are received, and what remains after the visit.

In Their Words “We wanted to create a place that, really, could only exist here; where Oregon's landscape, its remarkable ingredients, and genuine hospitality come together to create something special and memorable.” “We hope every guest leaves feeling more connected to our place than when they arrived.”
