i. Biography
Tim Raue, born in Berlin in 1974, began his culinary training at age 17 after a challenging youth in Kreuzberg and became head chef by age 23. He earned his first Michelin star in 2007 at Restaurant 44 in Berlin's Swissôtel and opened his eponymous restaurant Tim Raue in Berlin-Kreuzberg in 2010, which received two Michelin stars in 2012 and has ranked on The World's 50 Best Restaurants list since 2014, reaching as high as No. 26. Known for blending Asian culinary traditions—such as Japanese precision, Thai flavors, and Chinese philosophy—with exceptional products, he oversees multiple concepts including Brasserie Colette Tim Raue in Berlin, Munich, and Constance, and HANAMI by Tim Raue on TUI Cruises ships.
