The Path

Training at Wagga Wagga, then time at De Bortoli in Yarra Valley and at Gembrook in Yarra Valley, gave Timo Mayer a working view of the craft across different rooms and different pressures. Those years built the framework for Mayer Wines, founded in 2000, where he is founder and winemaker. The role is straightforward: the style and the label are bound to the same hand.

The Work Today

Oak gets ruled out plainly: “I always hated oak. That’s my number one enemy.” In trade terms, that reads as a decision to keep the cellar from overpowering the fruit, and to let the material stay legible. The point is restraint, not effect—clarity first, with the wine carrying the weight instead of the treatment around it. Bloody Hill Pinot Noir, Close Planted Pinot Noir and Dr Mayer Pinot Noir show that focus in a compact range. The work keeps returning to the same ground—site, variety and cellar judgment—so the differences have room to register. Repetition here is not redundancy; it is a way of tightening the result.

Signature

Timo's signature wines include The Doktor, Bloody Hill Pinot Noir, Close Planted Pinot Noir, and Dr Mayer Pinot Noir. The range is compact, and that economy is part of the point: the names have presence, but the wines are built to hold shape rather than chase volume. What is notable is the consistency of intent, with each bottle staying inside a narrow set of ideas and pushing them harder.
