    Coming Up

Since 2022, Timo Plenter has been Head Chef of Regional Friesoythe and chef of Ramen Touhichi. The work now splits between Germany and Kyoto, with each role anchored in a defined kitchen rather than a broad concept of authorship.

    Where They Are Now

At Ramen Touhichi in Kyoto, the ramen is built around place as much as process. Timo Plenter works in his childhood home in Sakyo Ward, and the restaurant’s name comes from the house where he was born. That kind of naming keeps the operation close to its own geography instead of borrowing distance or myth. The bowl there is narrow by design. A single-ingredient discipline keeps the method tight, and the result is meant to hold both clarity and depth without crowding the frame.

    Signature

Timo's signature dishes include signature soy-sauce ramen.

    Honors

Timo's honors include MICHELIN Guide Bib Gourmand (2024) and Guide Michelin Green Star (2024).
