The Climb
Professional kitchens shaped Tom Barnes through repetition, pressure and precision. At Trinity House, part-time kitchen work put him on the floor at service speed, learning the pace, stamina and basic discipline the trade requires. At Lakeside Hotel in Lake District, the full-time apprenticeship added formal structure, where technique, consistency and calm under heat had to hold up shift after shift. A run of kitchens with distinct standards followed, and each one widened Barnes’s range. At L'Enclume in Cartmel, Lake District, Tom Barnes worked as Head Chef in a room watched closely by peers. He then took a prize stage at Hof Van Cleve in Kruishoutem, Belgium, a stint that put him inside another kitchen’s system and pace. At Geranium in Copenhagen, Barnes worked as chef, extending that experience in a setting associated with precision and modernity. He later became head of Rogan & Co. Since 2024, Tom Barnes has been chef/owner of Skof. The role brings the earlier stages together in one place, with Barnes holding both the cooking and the authorship. It marks the point where years in other kitchens become a restaurant with his name attached to the standard.
Today
Since 2024, Skof has been the working expression of the line Barnes built through L’Enclume, Rogan & Co. and the kitchens before them. The role carries forward the habits formed in apprenticeship and in high-pressure dining rooms: steady accumulation, exacting standards and the ability to hold shape as the stakes rise.
