Coming Up
Working-kitchen discipline starts at the bottom of the line, and Tom Douglas learned it as assistant to the hotel’s cook at Hotel duPont in Wilmington, Delaware. That first station meant timing, repetition, and the kind of calm required when service tightens. By 1984, Seattle, Washington became the next kitchen ground, with restaurant work at Café Sport sharpening his sense of dining-room pace and the mechanics of hospitality. Restaurant building in Seattle took shape through a run of openings that each carried a different function in the city’s food economy. Dahlia Lounge in Seattle, Washington (1989–2021) marked a long chapter under Douglas’s name, one that helped define his presence in the market over time. Etta's Seafood (since 1995) shifted the work toward seafood and regional expression. Palace Kitchen (since 1996) added another house style to the roster, while Dahlia Bakery (since 2001) expanded the work into bread and pastry. Lola (since 2004) followed, then Serious Pie (since 2006), extending the range again. As co-host of Seattle Kitchen, Tom Douglas also brought that restaurant perspective into conversation, keeping the focus on food, place, and the trade around both.
