The Path
Apprenticeship at Hotel Neptun in Rostock-Warnemünde set the early discipline for Tom Wickboldt: pace, precision, and the habits of a working kitchen. The rest of his route moved through houses that widened that foundation without changing its terms. As cook at Bülow Residenz in Dresden, then at Landhaus Feckl in Ehningen bei Stuttgart, later at Oberländer Weinstube in Karlsruhe and Landhaus zu den Rothen Forellen in Ilsenburg im Harz, he worked across kitchens that together formed a practical education in range, repetition, and service. The move to head chef at Schlosshotel Kurfürstliches Amtshaus in Daun marked the point where responsibility for the kitchen sat squarely with Tom Wickboldt. He held that role until 2007. In 2011, he stepped into his own role as chef and owner at own restaurant at Seehotel Esplanade in Heringsdorf, where the work was tied more directly to his own judgment and pace. The years 2011–2017 were a distinct stretch in which he was not only running a kitchen, but shaping one around his own standards. Since 2017, Tom Wickboldt has held three concurrent positions: head of the entire kitchen of Marc O’Polo Store, chef of Kulmeck by Tom Wickboldt, and chef of O’Room by Tom Wickboldt. The spread of those roles points to a cook working across formats while keeping the same core discipline intact. Breadth here is not a slogan; it is a working method.
The Work Today
Tom Wickboldt is direct about what he does not want from a kitchen. “I am not a fan of trends.” That line defines the frame: the food is not built to follow the market’s noise, but to hold to a personal standard of taste and restraint. The menu begins with preference rather than doctrine. “For me, the point is simply to use my favorite ingredients in my menus.” That approach keeps the work close to the ingredients and close to the cook’s own palate. It avoids spectacle for its own sake and keeps the emphasis on selection, combination, and balance. “What matters to me is the mix, combined with an appealing presentation.” In other words, the plate has to work as a composition. The elements need to sit together cleanly, and the finish has to be readable without becoming ornamental. “Culinarily speaking, I am more global than strictly regional.” The range is broader than a single local rulebook, but the standard remains the same: clarity, control, and a polished presentation that serves the food rather than distracting from it.
