i. Biography
Tomoharu Shono’s work is built around ramen as a disciplined form, not a trend. As founder of MENSHO TOKYO in San Francisco, he has kept returning to the same demands: depth, precision, and restraint in the bowl. His own shorthand is plain: “Ramen has become my life.” That focus reaches back to Menya Shono, which he founded in 2005, and to a career shaped by repetition, adjustment, and long attention to one format.
The Climb
The climb here is measured in continuity. Since founding Menya Shono in 2005, Tomoharu Shono has kept refining a ramen-centered language built on discipline and exacting taste. He is also the chef and founder of MENSHO TOKYO, where the same priorities carry forward: protect the core of the bowl, then extend it without losing control. Across both names, ramen remains the center of the work, not an accessory to it.
Today
Today, Shono works from San Francisco across Menya Shono and MENSHO TOKYO, keeping ramen at the center of both operations. The craft in his hands is the accumulation of years spent on broth, noodle, and topping as a single system. The result is personal, but not casual: a bowl shaped by repetition, memory, and sustained attention to one of Japan’s most familiar dishes.
Signature
Tomoharu’s signature dishes show how ramen can carry different registers without leaving the form behind. Signature Toripaitan Ramen points to a creamy, full-bodied bowl; Duck Matcha shifts the frame toward something less expected; Signature A5 Wagyu Toripaitan Ramen w/ Truffle layers luxury onto the base; and Wagyu Tantanmen brings another reading of richness and texture. Taken together, these dishes show Shono working inside tradition while pushing its surface detail and finish.
In Their Words “Everything links back to ramen since I was 20 years old, it's really my life.”
Recognition
Tomoharu’s honors include Michelin Guide California (2017), a recognition that sits in line with the discipline of his work. Read against Menya Shono in 2005 and MENSHO TOKYO in San Francisco, the award marks not a break from the craft but a confirmation of a career kept tightly on ramen.
