The Path
Coffee and pastry counters run on repetition, but they also reveal who can keep pace when the room turns. Tony Velazquez first built his standing as co-owner at Zap in Georgetown, Washington, DC until 2007, a stretch that gave him early footing in one of the city’s most recognizable neighborhoods. That kind of work asks for stamina, a feel for the room, and enough consistency to hold a place in daily use. Since 2001, he has also been co-owner of Baked & Wired, staying close to the cadence of a café and bakery where coffee, pastry, and neighborhood traffic meet.
The Work Today

Tony Velazquez recalls opening-day pressure in exactly those terms, when a queue outside could turn impatient and the front of house became its own stage. His memory of, “We opened and all of a sudden there was a problem with someone butting in line,” points to a basic part of the trade: a busy shop is never only about service, but about managing expectation as much as product. In Tony Velazquez’s case, the household habit was already there, even if the standard wasn’t yet clear. “I came from a family where we drank a lot of coffee, but we just didn’t know what good coffee was,” he said.
