Coming Up
Formal training at French Culinary Institute gave Tory Miller a base, but the work that set his method came in service: line speed, repetition, timing, and the correction that happens only in a working kitchen. As a cook at The Park Inn Diner in Racine, Wisconsin, then as a chef at Judson Grill in New York City and Eleven Madison Park in New York City, he moved through formats that asked for different kinds of control. Returning to Wisconsin, he took on the Head Chef role at L’Etoile in Madison, Wisconsin (2003–2005), a stretch that helped settle the contours of his approach. Today, Tory is Executive Chef & co-proprietor of L’Etoile (since 2005) and owner of Graze (since 2010), holding legacy and expansion in the same frame.
