    The current craft is built around desserts with a focus on chocolate, using Japanese seasonal ingredients inside classic French dessert forms. At Toshi Yoroizuka, the recognizable structure is French technique, Japanese seasonality, and chocolate treated with attention to origin and finish. Counter-dessert service is central to the MIDTOWN format. At Toshi Yoroizuka MIDTOWN, Toshi Yoroizuka opened a 14-seat counter-dessert venue emphasizing a live-performance feeling. The scale makes technique visible: motion, timing, temperature, finishing, and service happen close to the guest. The open-kitchen approach established by Yoroizuka serves desserts immediately after they are made, moving pastry away from the display-case model and toward assembly at the point when texture is most active. Chocolate work extends back to cultivation through Ecuador. Toshi Yoroizuka opened Toshi Yoroizuka Cacao Farm in 2010, tying the boutique and plated-dessert side of the craft to cacao at its agricultural beginning. The flagship shop gives the Tokyo operation a fixed urban address. In 2016, Toshi Yoroizuka opened Toshi Yoroizuka Tokyo at KYOBASHI EDOGRAND 1F, 2-2-1 Kyobashi, Chuo-ku, Tokyo. The site carries the same working logic as the broader enterprise: pastry can be bought from a shop, served at a counter, or informed by farm rhythms, but it remains a made object governed by timing and material.
