Singapore cocktail practice here is built through service in different bar formats rather than a single house style. Vijay Mudaliar first worked as a bartender at a hotel rooftop bar, then at a whisky lounge, both in Singapore, before moving through The Library and the opening team at Pollen. The sequence put speed, spirits literacy, opening systems, and room craft into the same working base. The later training pattern stayed close to serious cocktail rooms. A return to The Library Bar, a stage at The Blind Pig, and a final bartending role at Operation Dagger gave Vijay Mudaliar exposure to different methods of menu thinking and execution in Singapore. In 2016 he co-founded Native, and in 2021 he co-founded Analogue Initiative. “We wanted to sell something other than flavor. Local produce, a keen connection to distillers, craftsmanship and tradition are what excites us.” Vijay has said.
The Practice Today
Native in Singapore is known for a cocktail program that works with local produce and has included ants as an ingredient. Vijay Mudaliar’s practice there includes collaboration with chefs on sous vide techniques, placing bar work in direct conversation with kitchen method rather than treating drinks as a separate lane. The later development of Analogue Initiative extends that operating model into another Singapore project. With Vijay Mudaliar as co-founder, the work remains tied to ingredient choice, technique, and the practical demands of running contemporary cocktail venues.

Peer and competition recognition for Vijay Mudaliar includes Altos Bartenders' Bartender (2018), 3rd best bartender in Singapore (2016), 3rd best bartender in Singapore (2015), Diplomatico Rum Competition (2014), 2nd place in the Diplomatico Rum Competition (2012), and Bartender of the Year.
