Formal wine study gave the work its first structure at Sonoma State University, where Vincent Morrow trained before entering the dining-room side of the trade. The French Laundry in Napa provided a setting where wine service depends on timing, restraint, and close coordination with the kitchen and floor. Restaurant Gary Danko in San Francisco added another layer of guest-facing service, broadening the practical command required of a sommelier in a high-expectation room. Wine direction in Napa Valley carries direct contact with producers, collectors, regional history, and the day-to-day demands of a serious cellar. As wine director at Press Restaurant in St. Helena, California (until 2025), Morrow worked inside that context, where list building has to balance place, depth, serviceability, and the operational realities of nightly service. Industry access and education are part of the modern sommelier’s remit, not separate from it. In 2021, Morrow began serving as co-chair, Diversity Committee at Court of Master Sommeliers (from 2021), extending his work beyond restaurant service into the structures that shape who enters, studies, and advances in the profession. Multi-restaurant beverage leadership requires the same cellar and floor standards at a broader scale. Since 2025, Vincent Morrow has served as wine and beverage director of Union Square Hospitality Group, carrying Napa cellar experience, fine-dining service, and industry committee work into a New York City group role.

Where They Are Now

Group beverage direction is an inventory, training, identity, and service problem at once. Since 2025, Morrow has been wine and beverage director for all Union Square Hospitality Group restaurants, managing beverage programs that collectively offer more than 10,000 wines across the group’s restaurants. The work requires control of large holdings, clear restaurant-by-restaurant positioning, and the ability to keep fine-wine standards usable in live service. The current role extends earlier disciplines rather than replacing them. Cellar command from Napa, floor service from San Francisco, education from GuildSomm, and the strategic responsibility of directing a major wine program all feed the work. His specialties include wine business strategies and marketing, alongside the Napa Valley focus developed through his years at Press Restaurant. In New York City, that background becomes a larger operating system: provenance, guest trust, list clarity, and complexity made serviceable. A short line from Morrow gives the work its pressure point: "If we don’t, who will?" In the trade, that question belongs to stewardship as much as logistics. It applies to bottles and lists, but also to access, training, service culture, and the way wine knowledge is carried forward.

Signature

Napa Valley wines are the central craft focus in Vincent Morrow’s sommelier practice. The specialization was formed most directly through his years in St. Helena, California, and now informs broader beverage work: producer knowledge, regional context, service judgment, and the task of matching a bottle to the room, the guest, and the moment.
