University of Mississippi was the training ground that put Wally Joe on a professional path. The early years that followed were spent at KC's in Cleveland, Mississippi (1989–2002), where he worked as chef and Head Chef in Mississippi. Those roles built the habits that carried through his career: consistency, precision and respect for the daily grind of the line. In 2002, he moved into chef/owner at Wally Joe Restaurant in Memphis, taking that approach into his own room. He later became chef, partner and general manager at Acre in Memphis, widening the scope of the job while staying close to the fundamentals. Today, Wally is chef/owner of Acre (since 2011), continuing to work with the same measured style.
