The Path
Formal training at Washburne Culinary Institute gave Wayan Kresna Yasa a structured base, and that structure shows in the way his work has been built: disciplined, exacting, and oriented toward scale. The next step was a larger operating context, where he served as Global Executive Chef and Culinary Director at Potato Head in Indonesia. That role required coordination as much as cooking, and it helped define a voice that could carry across borders without losing precision. Ownership and executive leadership now anchor the same through-line. As owner of HOME by Chef Wayan and Executive Chef of Kaum, Wayan Kresna Yasa uses those positions to keep a clear point of view in place. The emphasis is not on title alone, but on stewardship: Balinese cuisine remains the center of the work, not a decorative element around it.
The Work Today
Two current posts define the work now: Executive Chef at Kaum in Jakarta and owner of HOME by Chef Wayan in Pererenan. What connects them is a direct focus on Balinese cuisine, treated as the main subject rather than a side note. The result is a body of work that returns to the same culinary ground with discipline, using tradition as material while keeping the presentation current.
Signature
PAON: Real Balinese Cooking is one of Wayan Kresna Yasa’s signature dishes, and the title itself signals the program behind the plate: rooted, specific, and intent on keeping Balinese cooking legible. The name functions as more than branding. It points to a practice of placing the cuisine at the center and letting its identity read clearly.
In Their Words “When we were conceptualising Kaum, we knew it would be important to travel throughout the country to learn the different local flavours at the source.”
