Program director at the Secchia Institute for Culinary Education in Grand Rapids, Michigan, Werner Absenger has moved between kitchen work, scholarship, and nutrition without treating them as separate trades. The throughline is not a brand of personality; it is a method. Each post added another layer of technical judgment, and each layer kept food tied to health.
The Climb
A Master's Degree in Human Nutrition and a Ph.D. in Mind-Body Medicine gave Absenger an unusual frame for culinary work. That academic base later sat alongside his time in hotel and resort kitchens, where speed, consistency, and control mattered. He worked at Grand Hotel in Mackinac Island, Michigan (from 1988), cheffed at Gasthof Gramshammer in Vail, Colorado, cheffed at Scottsdale Hyatt in Scottsdale, Arizona, and became Head Chef at Cygnus 27 at the Amway Grand Plaza in Grand Rapids, Michigan (from 2003). Across those kitchens, the work shifted from service to leadership, but the standard stayed the same: exacting execution under pressure. Today, Werner is Adjunct Faculty of Saybrook University.
Today
He now serves as program director at the Secchia Institute for Culinary Education and as Adjunct Faculty at Saybrook University in San Francisco. Between those roles, Absenger keeps one foot in administration and the other in teaching, with food positioned as both technique and obligation. In 2014, he founded The Absenger Cancer Education Foundation in Spring Lake, extending that scope beyond the kitchen and classroom.
