He worked as patissier at La Tante Claire (Pierre Koffmann), then as patissier at Le Manoir aux Quat' Saisons (Raymond Blanc), before continuing as patissier at The Restaurant, Hyde Park Hotel (Marco Pierre White). He then worked at L'Esperance (Marc Meneau) in Burgundy, and at Maison Du Bouche (Pierre Romeyer) in outside Brussels, each stop adding pressure, precision, and range to a practice built on exacting execution.
