Yasuhiko Mitani is the founder and chef behind Sushi Mitani in Tokyo’s Yotsuya district, a restaurant widely described as one of Japan’s hardest reservations to obtain. His sushi philosophy emphasizes Edomae technique, house curing, and pairing sushi with sake and wine, and he has expanded the concept to Mitani New York at the Lotte New York Palace in Manhattan.
