Los Angeles was a deliberate move, not a detour, and his own words make the intent plain: "I wanted to bring the Japanese Sea of Umami to LA." The phrase points to the culinary language he is working in—rooted, specific, and adapted to a city that rewards clarity.

Yasuhisa's signature dishes include Nigiri-Ya, Yasu, and 17 Course Omakase.
