Wine service at this level is built from sequence and attention: table rhythm, glassware, timing, the structure of a dish, and the point at which a bottle should support rather than overtake. In Yoon Ha’s work, that discipline runs from Seoul, Korea, to University of California Santa Barbara, into the dining rooms of Napa, and then through a defining 2010–2020 run in San Francisco. Formal study at University of California Santa Barbara preceded cellar and floor work in Napa, where Yoon Ha was sommelier at La Toque in Rutherford and Downtown Napa (until 2010).
