i. Biography
Yoshiaki Kaneko a commencé sa carrière chez Lenôtre à Tokyo. Après quelques années passées en France dans de grandes maisons parisiennes telles que La Durée, Alain Ducasse au Plaza Athénée, Yoshiaki Kaneko ouvre sa propre boutique “Paris s’éveille” à Tokyo en 2003, et “Au Chant du Coq” à Versailles en 2013. Sa philosphie en pâtisserie c’est avant tout le respect de la pâtisserie française. Il crée ses recettes d’une manière contemporaine tout en conservant les recettes traditionnelles.
